Apple Kicking Cider Recipe

Cooking with Books tells BourbonBlog.com that hits the right notes perfect fall Gin cocktail by Francys Sandoval of La Cocina Kitchen. Who says Gin has to stay in the spring and summer months when the autumnal flavors can bring something new?

Apple Kicking Cider Recipe

2 oz. Gin (BourbonBlog.com recommends G’Vine Nouaison Gin)
2 oz. Apple cider
1/2 oz. Ginger syrup
1/4 oz. Lemon juice

Pour all the ingredients into a shaker with ice, and shake!

Strain the drink into a martini glass and garnish with slices of fresh apple.

Remember to use big clean ice cubes, they melt slowly therefore your drink dilutes less.

Gin CocktailFor the home made apple cider:

4 apples
1 cinnamon stick
4 to 5 cloves
2 tablespoons sugar

Place all the ingredients in a pot and add enough water to cover the apples. Let boil for an hour and then turn the heat down letting simmer for another hour. Smash all apples in the water and let cool. When cool strain into a glass container, letting all the liquid from the apple mash drain completely.

For the ginger syrup:

1 ounce Ginger, chopped
1/2 cup Sugar
1/2 cup Water

Combine all three ingredients in a sauce pan and let boil. Stir with a wooden spoon to mix sugar well. Let cool and strain into a container.

Take one 15 oz can of Libby’s 100% pure pumpkin, add 1 tsp of ground cinnamon, 1/2 tsp of ground ginger, 1/4 tsp of ground cloves and 15 oz of simple syrup and blend it all together in a blender. Store in the fridge.

Candy Corn for halloween Candy, one of the most popular Halloween candies we’ve made into a cocktail…so we’ll call it “Candy Corn.”

Invented in the 1880s, candy companies now produce nearly 35 million pounds of the corn candy each year. So spot on, one sip of this cocktail might make you forget you aren’t actually eating candy corn, you’re drinking you little Goblin. Russian Standard Vodka nicely to the kettle-corn infusion, and this cocktail will really pop on your pages, with its orange and yellow ingredients.

Candy Corn Cocktail Recipe

Candy Corn Cocktail Recipe1 1/2 oz. Candy Corn-infused Russian Standard Vodka **
1/2 oz. Moscato wine (sweet dessert wine)
3/4 oz. home-made citrus peel grenadine syrup**

Add all ingredients to a cocktail shaker with ice and shake very well. Strain into a chilled cocktail glass.

*to make candy corn-infused Russian Standard: for every 750ml bottle of Russian Standard, add in 1 cup cande corn and allow to infused in an airtight container for approx. 24 hrs. Fine strain candy corn and re-bottle. Store in fridge.
**to make grenadine syrup: for every 1 cup of POM wonderful pomegranate juice, dissolve 1 cup granulated sugar over stove top. Once dissolved, add in the skins of 1 orange and 1 lemon and simmer for 10 mins. Remove skins and chill syrup.

During the Mixed Drink Challenge, we join John Shutt, International Sales Director for Blanton’s Bourbon. John introduces us to Mixologist Col. Paul Borntraeger who created “The Blanhattan” cocktail as a twist on the classic Manhattan recipe.

Blanton's Bourbon
3oz Blanton’s Single Barrel Bourbon
1/4 tsp Ground ginger
1/4 tsp Vanilla (not imitation)
1/4 tsp Ground cloves
1/4 tsp Ground cinnamon
1/4 tsp Ground nutmeg
1 tsp Honey
zest of 1 Lemon
zest of 1 Orange
4-8 Whole peppercorns
1/4 cup Brown sugar
1/2 cup Cane sugar
1 btl KY Riesling
2 oz. KY Cab

Combine all ingredients (except for bourbon) in pot and bring to a slow boil. Once batch is boiling reduce heat add bourbon and let simmer on low heat for half an hour.

Ideally place in a glass jar and let sit for 24 hours. filter and strain (coffee filters take time but work best) and use.

Grilled Pineapple with Cinnamon Maker’s Mark Bourbon Glaze

Grilled Pineapple Recipe
Our Friends at BatterLicker.com tell BourbonBlog.com that this Grilled Pineapple with Cinnamon Bourbon Glaze is a finger-licking addictive glaze, spiked with brown sugar and an olive oil-butter combo with bourbon, cinnamon, cloves and cayenne for a spicy, smoky flavor. They also tell us that now that apples are in season for the Fall, it is perfect for apples as well!

It stands up to and complements the sweetness of the grilled pineapple.

Grilled Pineapple with Cinnamon-Bourbon Glaze

Serves 6

To make this vegan, skip the butter (it adds a nice richness to the glaze, but isn’t entirely necessary; add more sugar to thicken, if needed).

1 pineapple, top and bottom removed
1/2 c. Maker’s Mark Bourbon
1/2 c. brown sugar
1/4 c. olive oil
2 Tbsp. butter
1 1/2 Tbsp. ground cinnamon
1/2 tsp. salt
1/4 tsp. ground cloves
1/8 to 1/4 tsp. ground cayenne pepper

Cut body of pineapple into 6 slices of even width. Halve each slice. Set slices in a baking pan or platter that’s a few inches deep (so the glaze won’t spill later, and for easy transport to/from the grill).

PineapplesMix remaining ingredients together in either a saucepan or a microwavable dish that’s double the volume of the glaze ingredients (ensures the glaze doesn’t spill over as it bubbles up). If cooking in a saucepan on the stove, bring to a boil over medium-high heat, stir, and continue to boil until sauce thickens into a glaze, about 5 minutes.

If cooking in the microwave, cook for 3 minutes total, stirring after the first and second minutes (in the final minute, watch closely to ensure glaze doesn’t bubble over). Note: I usually taste the glaze after the butter has melted, and then again another minute into the process; this gives me a chance to adjust the seasonings to taste before I’m stuck with the final product.

Do ahead: pineapple and glaze can be prepared up to this point one day in advance and stored in an airtight, refrigerated container; glaze may need to be reheated for a minute or two if sugar re-crystallizes at all.

Pour glaze over the pineapple slices so it acts as sort of a marinade.

Once you’re ready to grill, preheat the grill until it is very hot (test the heat by holding your hand 1 inch over the grill rack; if you can only hold your hand there for 1-2 seconds, it’s at the proper temperature).

Grill pineapple slices, basting periodically with the glaze, until charred grill marks are visible on the pineapple, about 5 minutes per side. Remove pineapple from grill, drizzle with any remaining glaze, and serve warm. Vanilla ice cream optional.
